Moong Dal ki Barfi






Moong Dal ki Barfi



Ingredients:

1)  Moong dal - 1Kg
2)  Desi Ghee -  1/2 Kg
3)  Sugar  - 1 Kg
4)  Almond, Cashew nut
5)  Water

Method:

Sugar Syrup : Heat 500 gram water and add 1 Kg sugar to it. Keep boiling until sugar is dissolved. Take pinch of it between thumb and index finger, stretch it. There should be two 2 thread of syrup, then it is perfect for barfi.

Barfi Recipe: Soak Moong dal in water overnight and then grind it and make a paste.
Heat a pan and pour desi ghee in to it. Now add Moong dal paste and stir it till it is light brown.
Add sugar syrup and stir it until dal is cooked and leave the ghee.

Spread the prepared mix in a plate . Garnish it with crushed almond and cashew nuts. After 3-4 hours cut it into pieces.


Moong Dal barfi's are ready !!

Toor Dal - Simple and easy to cook

Toor dal is most common dish made on daily basis in Indian kitchen. Very easy cook, lets try it.

Ingredient: 
1) Toor (Arhar ) dal or Pigeon pea - 1 cup
2) 2 Tomatoes(chopped)
3) 2-3 Green chillies (chopped)
4) 1 cup coriander leaves (chopped)
4) Salt as per your taste
5) 1 table spoon turmeric powder
6) 1 table spoon cumin seeds
7) 1 table spoon mustard seeds
8)  2-3 table spoon Vegetable oil
9) Curry leaves (optional)
10) Water three times of dal , 3 cups


Wash the dal (pigeon peas) and drain the water and put dal into pressure cooker and add 3 cups of water and if you don't have pressure cooker then add 5 to 6 cups of water in the pan. Now add  tomatoes , green chillies , coriander leaves, turmeric powder and salt as per taste ,close the lid and let it cook on low flame for 10-15 minutes (2-3 whistles) . Cooking on the low flame really enhance the taste.


You can eat the dal just after boiling many places of India they like it that way  or you can temper it so lets learn how to temper.Add vegetable oil in pan heat it and add curry leaves, cumin and mustard seeds and boiled daland stir it for 5 minutes.

Dal is ready to serve. Serve it with plain Rice.

A special kind of taste roast the Toor dal little and then add water (do not wash the dal this time) and add other ingredients same as above.

Dhokla

 As Edison said, " I have not failed. I've just found 10,000 ways that won't work"
I was trying to make good "Dhokla" since long time , now I know seven different ways that won't work.Here is the formula to make Awesome "Dhokla". 

You will need below items:

1) Gram Flour (Besan) -2 Cups
2) Semolina (Suji) - 1 table spoon
3) ENO powder -2 table spoon
4) Green chilly - 2 pieces
5) Ginger and green chilly paste - 1 table spoon
6) Curry leaves (Kadi Patta)-  6-7 pieces
7) Mustard seeds - 1 table spoon
8) Salt - 1/2 table spoon
9) Water - 1 cup
10) Oil - 1 table spoon


Let's start the experiment ..

Mix the gram flour, salt ,semolina ,ginger and green chilly paste with water. Make a smooth paste and keep it aside.Heat the water in the pressure cooker.Now add the ENO powder in the paste and immediately pour the mixture in a greased  container. Place the container in the cooker and cook in steam for 20 mintues.Take out the container and keep it aside for cooling. Once it is cooled cut the "Dhokla" into pieces, take out of container.

Now move on to garnishing..
Heat the oil in the pan and add mustard seeds , curry leaves and  green chillies
and fry it for 2 mintues and then add some water and sugar and stir it. Pour this on the dhokla's.

Your dhokla is ready serve it with sweet curd or green chetny.

Experiment with rice

 
I am going to share my latest experiment. It is instant , tasty and healthy recipe. It just take few minutes to cook.It is "Lemon Rice".
You need the below ingredient to cook.


Ingredients:
1) Rice (1 Cup)
2) Lemon juice (2 lemons)
3) Coriander leaves and coriander powder
4) Ground nut (fried)
5) Salt (as per taste)
6) Turmeric
7) Green chillies
8) Red chilly powder
9) Curry leaves (5-6)
10) Mustard seeds (1 table spoon)
11) Vegetable oil (3 table spoon)
12) Onions (2)

So let's start the experiment, be prepared with your apron and all the equipments.

Boil the rice with plenty of water. Rinse it with cold water. Rinse the rice until the water is clear and not cloudy. Rinsing the rice helps get rid of any starch and impurities.


Now move on to next step, add vegetable oil in the pan and keep it on the flame and heat it for a mintue. Put curry leaves, mustard seeds, green chillies and onion fry them till onions get light brown. its time to add red chilly powder, turmeric and coriander powder ,salt and stir it for 2- 3 minutes.Now time to add rinsed rice in pan, mix it well. Cook for 10 minutes.

Mix the lemon juice and garnish with coriander leaves and fried ground nut.

Uppu 's Aloo Bhaji


Ingredients:

Aloo(Potatos)
Kedi pata
Onion
Chilli powder
Turmric
Cumin Seeds
Musturd Seeds
Oil
Salt

Preparation:
Put some oil in a pan, heat it and add some kadi pata, musturd seeds and cumin seeds. Add chopped onions
fry till it gets brown and  then add chilli powder, turmric powder, salt. Stir it. Add potates(thin pieces).Fry till it get cooked.
Aloo s ready..

Aloo Khatta (Potatos)

Aloo Khatta (Potatos)

1) Potatos  6-7
2) Tamrind
3) Turmeric 
4) Red chilly powder
5) Coriander powder
6) Chat masala
7) Cumin seed powder
8)Gram Masala
9)  Coriander leaves
10 ) Veg. Oil
11) Salt

Preparation: Boil the potatoes, peel and chop them in piece(medium size). Add Red chilly powder,Coriander powder,Chat masala, Cumin seed powder, Gram masala and  Salt in potatoes and mix them.

Soak the Tamrind in water for half an hour then mash it and filter.

Add some oil in a pan and put some cumin seeds and add this mixture let it cook for some time, then add Tamrind  juice to mixture.Garnish it with Coriander leaves

The ALOO KHATTA is ready to serve.

Lets start the era of Aloo (Potatos)

Once upon a time in 801 skyline villa, I was in kitchen and dreaming about to be a MASTER Chef one day. Then  Mickey(Aniket Thakkar) the chef (King of Aloo recipes) happens to be there. He told me how his mother used to cook different type of aloos, ( around 50 recipes , aloo as main ingredient). Then the journey began...
So here I am going to present some of those Aloo Recipes..

Aloo Nimbuda  (Potatos)

1) Potatos  6-7
2) Lemon  3
3) Turmeric 
4) Red chilly powder
5) Coriander powder
6) Chat masala
7) Cumin seed powder
8)Gram Masala
9)  Coriander leaves
10 ) Veg. Oil
11) Salt
